County Schools Offer Gluten Free
Celiac Students Get Gluten Free Meals
Skaneateles School Lunch Director Elaine Crysler says her district is undertaking the difficult effort to go gluten free because of an increasing trend in students being diagnosed as allergic to gluten or wheat. "It's not just, ok we have gluten free bread, you can have your sandwich on gluten free bread. There actually has to be a procedure as to how to prepare the sandwich," Crysler explained.
To avoid cross contamination, the food will be prepared in separate work areas with some separate equipment. The schools will begin serving gluten free pizza and deli sandwiches by March 1 and then will expand it's gluten free offerings from there. Kudos to Elaine Crysler!

So great to hear that schools are catching on to offering a gluten-free diet. I keep coming across more and more schools that are doing so, and it is wonderful to hear! Kudos to them all
